What I Learned This Week

Last week seemed like such a long week. I'm still processing really. So I will go with a light-hearted lesson for this weeks carnival of What I Learned This Week, hosted by Musing's of a Housewife.


I learned a new recipe: Cucumber Sandwiches: 
1 (8 oz.) package of cream cheese, 
1 large cucumber peeled, 
seeded and grated, 
1TBL of chopped chives, 
1 TBL of fresh dill, 
1 tsp of season salt, 
1/2 cup of feta cheese, 
and 1TBL of mayo (omitted, I think y'all know about my mayo issues).

Oh, and one loaf of white bread. With the crusts cut off. Mix, Refrigerate (for at least an hour, overnight if possible), spread, cut into 1/4's and serve.

I learned that I may never get over my Mayo and White Bread issues: even though I omitted the mayo, my mind couldn't get over the mayonnaise look of the filling.  Which made me think it tasted like mayo, although everybody who tasted it said it didn't....I also found myself apologizing to some friends about the two large loaves of white bread sitting on my counter. As if having white bread in the house was a horrible sin. However, the 3 pound bag of m&m's sitting in the cupboard I have no shame over...

I decided that once batch would be good, but three batches would be BETTER. So after many dozens of sandwiches, I still have a ton of this filling in my fridge. If you want it, its yours!

I have learned (again) that meeting new friends takes a pinch of effort, but a big heaping scoop of courage. People assume its easy for me to bring people together, or to make friends because God has gifted me with the talents to do such things. But it isn't easy. As a matter of fact, the older I become the more difficult it is...This week I had my friend (and running partner), Elisa, come over for lunch and invited another gal, Allison, who is a new friend I am excited to get to know better.  They are both homeschooling Mom's and were such an encouragement to me this past Friday. I can't wait to do it again!

I have learned that if you spend 15 minutes typing a post while allowing your puppy to run amuck, you will have a mess of brown construction paper to clean up when you are finished.

LOL. I've learned a lesson similar to your last one but it involved a 3 year old and toilet paper! LOL.

Girl, you didn't really take a blogging break - did you? I haven't been over here 'cause I thought you were "off" for the week. Well, this was a nice surprise to visit and find a whole bunch of fun tidbits to read.

By the way, I praying for your friends and praising God for your church and the way they allow Him to use them.

I'm a fan of *anything* with feta so you can bet I'll be whipping up a batch of those sandwiches as soon as I can find an excuse. I'll be omitting the mayo too my friend!

And I just have to say that you are definitely gifted in the bringing together of friends department. In fact I've contemplated coming to NC for the sole purpose of crashing one of your infamous lunches...

That recipe sound delish. It is hard to reach out to new people but the rewards are great once the effort is made. Glad the puppy didn't make a different kind of mess.

You learned some great lessons there.. I must not have been around yet for the mayo post.. so how do you eat egg salad.. That is like the best sandwich ever :-P hehe hope that didnt make you gag!

YUM and Oh meeting friends is not my cup of tea...I not a people person in person...I am kind of a self admitted snot...I don't mean to be...I just find solice in my own life and those of total strangers on line

We have a friend who has serious mayo issues too! Me? I love me some mayo. ;) However, I do share the same white bread and M&M issues...

I find hard to reach out to people too. I'm not sure why that is. I'm kind of an introvert to start, so it's not always a "natural" thing for me. But, when I do step out and make the effort, I'm always glad I did.

I am totally with you on both mayo and white bread - especially mayo - YUCK! Anyway, I think you could make these sandwiches on a soft wheat bread as well - sounds delish to me!

I like the way you invited your friend and had her bring a friend for you to meet and have a possible new friend. I used to do this where we lived a year ago and have found it difficult here as it is such a remote area and not a lot of kids of the same age. Sorry bout the sandwiches - sounds yummy though

I totally get your issues with white bread...I can't bring myself to eat it now that we've switched to whole wheat...I guess it's a mental thing....but those sandwiches do sound amazing. I'm down with anything that calls for cream cheese, yes ma'am.

You mean you don't love egg yolk (fat) and oil (more fat)mixed with a little vinegar?
